Crockpot Pork & Apples
I made this recipe a few months ago and it was delicious - served it to Sarah D and she had seconds! I was not able to post it before now because I just found the photo I took! This is from She Cooks. I left out the brown sugar and apple juice concentrate originally in the recipe. I had some apple cider (no sugar) on hand so I used that instead.
Ingredients:
1 large onion, cut in half and then thinly sliced
2 granny smith apples, peeled and sliced
Pork sirloin roast, boneless
32 oz package sauerkraut (in the deli section around prepared foods or the hotdogs)
12 oz (or less) apple cider
2 cloves garlic, minced
1/2 teaspoon cayenne pepper
1. Arrange half of the onions and half of the apples in the bottom of the crock pot. Lay roast on top of the onions and apples. Rinse and drain the sauerkraut and spread over the top of the pork roast. Pour the juice over all. Sprinkle with the minced garlic, brown sugar and cayenne.
2. Set crock pot on low and cook for 8-9 hours or until pork begins to fall apart.
