Mustard & Herb Steak with Mashed "Potatoes"
Yet another fabulous meal thanks to The Primal Blueprint Cookbook. This is actually a marinade that you could use on any meat, but we used it on steak. This was of course when it was warm enough to grill outside. This would be fine cooked in the oven however.
Mustard & Herb Marinade
Serving size: 1/2 c, enough for about 1 lb meat
Ingredients:
2 Tbsp dijon mustard
1 Tbsp red wine vinegar
2 Tbsp oil
2-4 garlic cloves, finely chopped
3 Tbsp fresh oregano (or 1 tsp dried)
1/4 c chopped fresh basil
4 twigs fresh rosemary (or a bit of dried)
Mix all together (leave rosemary whole if using twigs), pour onto meat and allow to marinate then cook.
Mashed Potatoes
Cut cauliflower into small florets and steam until soft but not mushy. Mash or run through food processor. Season with butter, salt & pepper. Yum!
