Paleo Coconut-Chip Cookies

Makes 14 cookies
 
1 cup almond meal
1/2 tsp vanilla
1/2 tsp baking soda
1 egg
1/4 c honey
1/4 c unsweetened chocolate, finely chopped (less if you do not want super rich cookies)
3 Tbsp cocoa powder
2 Tbsp coconut (or more if you like coconut)
 
Mix egg, honey and vanilla separately then mix with dry ingredients (I just mixed mine all together at one time) and put on parchment paper or baking sheet sprayed with oil.
Bake at 350 for 10 minutes
