Turkey Stew

Not sure what to do with all those turkey leftovers from Thanksgiving?  Try this recipe - it was super yummy and Chad and I had lots of leftovers.

Ingredients:

Coconut oil
1 large onion, diced
2 medium carrots, diced
3 plum tomatoes, diced
2 small eggplants, diced
2 green peppers, diced
2 garlic cloves, minced
1/2 c lima beans
1 c dry white wine (prefer chardonnay)
Thyme, parsley, sage
Salt and white pepper
1 1/2 lbs turkey, torn into small pieces
16 oz or so of chicken broth

1. Heat coconut oil in a stock pot and saute onions, carrots, tomatoes, eggplants, green peppers, lima beans, and garlic until soft.  Feel free to add in any other veggies you like or take out ones you don't like.
2. Add herbs/seasoning.  I just sprinkled in whatever I thought tasted good so just play around with it!
3. Add turkey and chicken broth.
4. Bring to a boil then reduce to low heat and simmer for ~20 minutes until warmed through. Enjoy!

You're welcome! = ) Dallas said she didn't want to eat beef and egg stuffed tomatoes for a month so I thought it was time to intervene!

woop! woop! oddly enough I made a beef stew this morning for the slow-cooker to have later tonight. Yay for stew.
